Lemon Ginger Chicken

Hey bloggiee! :)
Yesterday was my last day of work at Chili's and I'm joining my new place as soon as tomorrow. You know what that means? I don't know when can I cook agaaaaaainnnnnn. :/ 
I decided to try making my favourite chinese dish, Lemon Ginger Chicken with some mixed vegetables. It's basically marinated fried chicken with sweet lemon sauce (the cooking method is exactly the same like sweet and sour.)


Here's the ingredients;
MARINADE
- 2 eggs 
- 4 tbsp soy sauce 
- 4 tbsp vinegar
- 2tbsp sesame oil
- 2 lemon zest


These marinade items are enough for one small chicken pieces. Marinade for at least half an hour. 
Mix some adequate amount of corn flour, salt and white pepper. I added some dried parsley as well. 


In the mean time, prepare the following ingredients;
- two small onions, cut into wedges
-about one and half cup of ginger, sliced
- 3 lemon juice, 1 lemon sliced thinly
- 2/3 cup sugar 
- 1 cup chicken stock 

Now let's start! :)
1. Dip the marinated chicken into the corn flour mix and arrange on a tray.

2. Deep fry the chicken until it's golden brown. 

3. Now, you can start preparing the sauce. Saute the onions and ginger in a sauce pot. Add the lemon slices as well.

4. Pour in the lemon juice.

5. Pour in the chicken stock and sugar, let it boil.
6. Lastly, add about 1/4 cup of corn starch as a thickening agent. And your sauce is done! :)

Serve the dish with the lemon ginger sauce poured over the fried chicken. I served it with stir fried mixed vegetables and white rice.

A Taste of Nyonya Cuisine : Ayam Pong Teh

Cooking on Sundays used to be my weekly routine but it's been some time since I joined work. 
Since I'm home today, sis requested for chicken pong teh so why not? I've decided to share the recipe here cuz it's really simple. A Nyonya style chicken and potato stew.



Here's what you need to cook this easy dish.
- 1 small chicken, cut into small pieces and marinade with 3 tbsp brown sugar (preferably gula melaka) and salt.
- 5 cloves of garlic, finely chopped
- about 3 inch of ginger, finely chopped as well but I sliced em thinly. I like it that way. Hehe.
- 5 red onions, sliced.
- 2 small packets of tauchu (fermented soy beans)
- 3 tbsp kicap pekat manis (sweet soy sauce)
- 3 tbsp kicap cair (soy sauce)
- 3 whole potato, peeled and cut into cubes
- shiitake mushrooms

Ingredients for Ayam Pongteh

Here's how you cook it. :)

1. Saute the garlic and ginger and add in the onions as well. Stir until they're fragrant.

2. Add in the tauchu and stir well.

3. Add the chicken pieces and stir until the chicken is dry and well coated.

4. Pour in 3 cups of water and the soy sauce. Boil and let it simmer for about 15 minutes.

5. Add in the potato and shiitake mushrooms. Check the seasonings alright. :)


6. Leave it simmering until the potatoes are soft and the chickens are cooked well. In the meantime, you can make some easy siew pak choy dish! :D

Saute some chopped garlic and ginger, add in onions and lastly siew pak choy and season well. As simple as that! :)

6. Aaaaand the stew is done! :D

(Yet Another) New Chapter in Life

Hey bloggy. :) 

I can't remember the very first time I've ever blogged but I do know that it has been more than about 5 years. Since high school; to be precise. Those were the days when I used to rant about almost everything here with unbelievable amount of bad words (don't judge, I was once a normal kid who used to think filthy words are cool ok) even though I don't even know how many people would actually be reading my posts. 
I remember having so many blogs, deleting one after another and my longest active blog (I deleted most of the posts, sorry) was Shanu Krishnan's. But on my second year of college, I somehow stopped blogging as frequently as before. I can recall having fun with the variety of blogger templates and stuffs bloggers do and yeah, I've decided to be back with only positive vibes
~aummmmm~ 

My last post on Shanu Krishnan's was something about how I struggled to find a job after graduating and I've had some caring blogger mates who actually took time and effort to message me regarding it. I'm glad (not so glad, actually lulz) to tell that I've somehow got a job at a famous grill & bar. Even though being a normal front house staff despite having qualification for higher positions are definitely not a career-thing, I'm happy with my flexible timetable as I got to continue my passion in baking (I sell baked stuffs hehe). And how can I even not mention about the people I met there. My beloved squad.
